Didn’t see your post until today. The Discovery channel show Wheeler Dealers did a restoration and upgrade on one for being a food truck, season 12, episode 16.

No worries! Yes, I saw that episode, very nice! I wasn’t a fan of the engine swap though....I know the Ford engine was an upgrade for modern driving, but it would’ve lost some of it’s charm not having that old Traction-derived unit in there! :)

The lighting and electrical upgrade was nice but so pricey. Makes me wonder if they really do turn any profit or if its just typical TV scripted lies.

I always assume it’s scripted to some extent... apparently their work can be shoddy at times as well (although some of this may well be the owners since the Wheeler Dealers worked on it).
That being said, the repair methods and dissasembly/reassembly are usually accurate, and I enjoy learning how different cars work and are put together, so I still find it an interesting show! :)
